Organic farming thrives on diversity and good composting methods; this keeps the soil rich and enables the growth of nutritionally dense crops that are full of flavor. Our zero-waste and organic green cycle starts in our restaurant: leftovers and peels feed our many farm animals, and the remainder goes to compost. Manure is collected and added to our compost, and when ready, it is spread over the crops, providing essential nutrients for optimum plant growth. We do not use any chemicals on our farm and produce our own repellents to deter bugs and insects. Our farm team takes care of the crops, and when they are ready for harvest, they supply our restaurant, where the green cycle begins anew.
